To serve with:

200g cooked quinoa

30g chopped almonds

20g raisins

Instructions:

Slice tofu into steaks or cubes and place in a bowl. Drizzle over 15ml olive oil and add ginger. Set aside for 10 minutes.

Heat 15ml olive oil over medium-high heat and add onions.

Cook onions until soft. Add tofu marinade, mushrooms, and vegetables.

Cook, covered for 8-10 minutes or until veggies are tender.

Heat a separate skillet over medium-high heat and when hot add tofu steaks.

If needed add some more olive oil and cook tofu steaks until nicely golden-brown.

Serve while still hot with vegetables, quinoa, raisins, and crushed almonds.
